#63: Influenza and Food (Gluten Free Friendly)

The flu?! Seriously? I was expecting to hear sinus infection, but the flu? The nurse advised me that despite me receiving my flu shot early Fall, the CDC released a statement that most vaccines produced this flu season were ineffective.

Le sigh. I guess it would help if I watched the news from time to time.

After leaving the doctor's office, I headed to Publix to stock up on soup and juice. Gotta get my strength back. Being that I have a gluten sensitivity, I thought it would be a good idea to review the food items that I try. Continue reading below for my review.

Snyder's of Hanover Gluten-Free Mini Pretzels

They really taste like pretzels!  Of course there is that slight difference in texture synonmous with gluten-free carbs that I like to describe as "slightly flat." As you can see in the picture above, I threw a few in with my soup. The pretzels instantly soften and tasted stale. Ugh. However, for dips such as peanut butter and hummus I say go for it!

Ingredients: Corn starch, potato starch, tapioca starch, palm oil, cellulose gum, water, dextrose, salt, baking powder (sodium acid pyrophosphate, sodium bicarbonate, corn starch, mono-calcium phosphate), soy lecithin, yeast, citric acid, soda.

Amy's Organic Light in Sodium Lentil Vegetable Soup:

Lentil soup is one of my favorites so I was extremely excited to try this one. While very hearty with veggies and lentils, the lack of salt left the soup a bit bland. I would suggest adding a pinch of sea salt, garlic powder and onion powder to liven things up a bit.

I would purchase again because it's a great base to add your own seasonings to or layer underneath a piece of seared salmon. Yum!
